Black Bean and Corn Salsa–Oil-free

This salsa is so easy, fast and versatile! It is one of the standards that  I try to on hand all of the time to add to many things. Serve it on a Mexican buffet along with Pico de Gallo (see my Recipe post here http://table-karma.com/pico-de-gallo-salsa-oil-free-recipe/) and Guacamole (see my Recipe post here http://table-karma.com/best-guacamole/). Try it hot or cold, as a topping for a baked potato, added to a warmed corn tortilla topped with refried beans and hot sauce, added to my morning bowl of steamed vegetables, or as a side dish, or as a meal. I use organic, salt-free black beans, frozen organic corn, red bell pepper, fresh or roasted, jalapeño peppers, fresh or from a jar, diced red onion or green on, or both, cumin, salt and pepper and a sweetener, if desired–just a touch of agave syrup, maple syrup or sugar, and a squeeze of lime juice. So easy–so good.
